heard of or tried the ancient grain called amaranth? Amaranth is a tall plant
with wide leaves and flowers that are bright and beautiful, coming in various shades
of purple, red, or gold. The stems, leaves, and seeds of the amaranth plant are

kale, and are often added to soups, salads, or stir-fries.
