HEALTH SERIES #31: AMARANTH

It is natural to become physically weaker as one ages. However, it is possible to stay younger and healthier than your physical age by what you eat at your table every day. More and more medical research and studies have shown the medicinal properties and benefits of herbs and healthy diet.

As of the year of 2024, we have been looking into a variety of herbs one by one, their nutrition facts, and healthy diet so that we are able to lead a life with more aplomb even if we happen to deviate from the optimal state of health.

 

# 31. AMARANTH

Have you heard of or tried the ancient grain called amaranth? Amaranth is a tall plant with wide leaves and flowers that are bright and beautiful, coming in various shades of purple, red, or gold. The stems, leaves, and seeds of the amaranth plant are all edible. The leaves can be eaten fresh or cooked, similar to spinach or kale, and are often added to soups, salads, or stir-fries.

Frequently, amaranth is used in its whole grain form, but it is also used as a flour for baked goods or is puffed or popped for use in cereals and granola bars.

If you don’t like to spend much time in your kitchen, amaranth is one good choice of ingredient for your healthy diet. The amaranth grain is easy to cook. Simply bring amaranth and water to a boil in a saucepan (using a 1 cup amaranth to 2 cups water or 1 cup amaranth to 3 cups water ratio, depending on how you want the texture to be when cooked). When the water reaches a boil, reduce the heat to low and simmer for about 15 minutes or until all the water has been absorbed.
