HEALTH SERIES #31: AMARANTH

It is natural to become physically weaker as one ages. However, it is possible to stay younger and healthier than your physical age by what you eat at your table every day. More and more medical research and studies have shown the medicinal properties and benefits of herbs and healthy diet.

As of the year of 2024, we have been looking into a variety of herbs one by one, their nutrition facts, and healthy diet so that we are able to lead a life with more aplomb even if we happen to deviate from the optimal state of health.

# 31. AMARANTH

Have you heard of or tried the ancient grain called amaranth? Amaranth is a tall plant with wide leaves and flowers that are bright and beautiful, coming in various shades of purple, red, or gold. The stems, leaves, and seeds of the amaranth plant are all edible. The leaves can be eaten fresh or cooked, similar to spinach or kale, and are often added to soups, salads, or stir-fries.

Frequently, amaranth is used in its whole grain form, but it is also used as a flour for baked goods or is puffed or popped for use in cereals and granola bars.

If you don’t like to spend much time in your kitchen, amaranth is one good choice of ingredient for your healthy diet. The amaranth grain is easy to cook. Simply bring amaranth and water to a boil in a saucepan (using a 1 cup amaranth to 2 cups water or 1 cup amaranth to 3 cups water ratio, depending on how you want the texture to be when cooked). When the water reaches a boil, reduce the heat to low and simmer for about 15 minutes or until all the water has been absorbed.

Since amaranth is a gluten-free grain, it is often included as a safe ingredient in the diets of people with 1.  _____________ disease, who have an immune reaction to gluten, a protein found in grains such as wheat, rye, and barley. It is high in nutrients such as protein, 2. fi____, iron,

3. sel_________, 4. vitamin _____, 5. _______nesium, phosphorus, and manganese. Amaranth may help reduce 6. chol__________ levels, lower high blood pressure, reduce 7. inf______________, aid in weight management, and support 8. b________ health which could help prevent Osteoporosis.

It is generally considered safe to consume in everyday food amounts. Cooked amaranth may be used in place of other grains as a side dish, mixed into soups, added to smoothies, added as a topping for salads, or eaten as porridge.

Acrostic poem using AMARANTH by Jean J. Lee

Ancient people were wise enough

Meals were full of healthy colors

Affable gatherings and parties featured grains

Ready to be cooked in versatile ways

Amaranth is too good to be a side dish

No longer a nascent idea of cooking the grain

Truly sacred ingredient it is!

Halcyon life can be yours by eating amaranth every day!
